- 10 lbs wildflower honey
- 12 lbs fresh plums, pitted with skins on
- 3 oz acid blend
- 1 packet American Ale yeast

Sanitize all equipment thoroughly before starting.

In a large brew kettle, heat 2 gallons of water to approximately 160°F (70°C).

Gradually stir in the wildflower honey until fully dissolved.

Remove from heat and cool the honey-water mixture to room temperature.

In a fermentation vessel, combine the cooled honey-water mixture with 3 oz of acid blend.

Add the pitted plums, ensuring they are crushed to release juices.
- 7.
Pitch the American Ale yeast into the mixture, stirring gently to combine.

Top off with water to reach the 5-gallon mark, ensuring everything is mixed well.

Seal the fermentation vessel with an airlock and set it in a cool, dark place.

Allow the mixture to ferment for about 2 to 3 weeks, or until bubbling ceases.

Once fermentation is complete, siphon the melomel into a secondary vessel, leaving sediment behind.

Let age for at least 2 to 3 months for improved flavors, then bottle and enjoy responsibly!
