- 10 lbs. orange blossom honey
- 5 lbs. wildflower honey
- 2 tsp. yeast nutrient
- 12 lbs. fresh pomegranate seeds (or 100% pomegranate juice)
- Champagne yeast
- Water (enough to make 5 gallons of wine must)

Collect fresh pomegranate seeds (if using) and blend them lightly to release the juice, or measure out pomegranate juice.

In a sanitized fermentation vessel, combine the orange blossom honey and wildflower honey.

Heat enough water to dissolve the honey (not boiling), then add it to the vessel, stirring gently.

Add the pomegranate juice or blended seeds to the mix.
- 5.
Fill the vessel with enough water to reach a total volume of 5 gallons, ensuring it's well mixed.

Stir in the yeast nutrient, allowing it to dissolve fully.
- 7.
Pitch the Champagne yeast into the must, sealing the vessel with an airlock.

Ferment at a stable temperature (around 68°F to 72°F) for 2-4 weeks, or until fermentation activity ceases.

Once fermentation is complete, siphon the mead off the sediment into a clean vessel, allowing it to clear.
- 10.
Bottle your Pomegranate Harmony Melomel, ensuring to leave some headspace, and then age for at least 3-6 months for flavors to mature.
