Dragon's Kiss Pomegranate Melomel

Crafted from pure honey and rich pomegranate juice, this mead blends the health benefits of rooibos and black tea, creating a vibrant beverage that sings of ancient traditions. ingredients
- 2.5 lbs honey
- 1/2 gallon pomegranate juice (preservative-free)
- 1 gallon of spring water
- 1 packet Champagne yeast
- 1 tsp Irish moss
- 2 bags rooibos tea (red tea)
- 1 bag black tea
- 1 tsp yeast nutrient
- Optional: 1 tsp gypsum

Begin by sterilizing all equipment with a solution of water and a small amount of bleach. Rinse well to ensure no residue remains.

In a large pot, combine the spring water and honey over medium heat, stirring gently until the honey is fully dissolved.

Remove the pot from heat and add the pomegranate juice. Let the mixture cool to room temperature.

In a separate heatproof vessel, steep the rooibos and black tea bags in boiling water for about 10 minutes. Once steeped, remove the bags and add the tea to the honey-pomegranate mixture.

Sprinkle the Irish moss and yeast nutrient into the mixture and stir.

When the mixture is cooled (around 70°F), sprinkle the Champagne yeast on top. Allow it to sit for 15 minutes before stirring to integrate the yeast evenly.

If using, add the optional gypsum to aid in fermentation.

Cover with a sanitized lid and airlock, and place in a dark, warm location for fermentation (2-4 weeks).

After fermentation, siphon the mead into sanitized bottles and seal. Let it age for at least 1-3 months for flavors to mature.
