Zesty Vegetable Fried Rice Medley

- 2 cups cooked rice (preferably day-old)
- 2 cups frozen mixed vegetables (carrots, peas, corn, green beans)
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 1 small onion, diced
- 2 tablespoons oyster sauce
- 1 tablespoon dark soy sauce
- 1 teaspoon bouillon granules
- 1 teaspoon sesame oil
- 2 large eggs, lightly beaten
- 3 green onions, sliced
- Salt and pepper to taste

Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. Add the diced onion and garlic, and sauté until fragrant and translucent, about 2 minutes.

Push the onion and garlic to one side of the pan and pour in the beaten eggs, scrambling until fully cooked, and then mix with the onion and garlic.

Add the remaining vegetable oil and toss in the frozen mixed vegetables, cooking for 4-5 minutes until tender.

Stir in the cooked rice, breaking apart any clumps, and mix well to heat through.

Drizzle the oyster sauce, dark soy sauce, bouillon, and sesame oil over the rice, stirring everything to combine evenly.

Season with salt and pepper, adjusting to taste, and fold in the sliced green onions just before serving.
