Miso Teriyaki Udon Stir Fry

Savory udon noodles are fried up in a delicious miso and teriyaki sauce with fresh vegetables for a filling and satisfying meal. Perfect for a quick and easy weeknight dinner.

- 12 oz udon noodles
- 2 tbsp vegetable oil
- 2 tbsp miso paste
- 2 tbsp honey
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp ginger, grated
- 3 garlic cloves, minced
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 1 cup snow peas
- 1 cup shredded carrots
- 2 green onions, sliced
- sesame seeds, for garnish
- red pepper flakes, for garnish

Cook udon noodles according to package instructions and set aside.

In a small bowl, whisk together miso paste, honey, soy sauce, rice vinegar, ginger, and garlic to make the teriyaki sauce.

Heat oil in a large skillet or wok over medium-high heat. Add broccoli and bell pepper and stir fry for 2-3 minutes.

Add snow peas and carrots and continue to stir fry for another 2-3 minutes.

Add cooked udon noodles and teriyaki sauce to the skillet and stir fry for another 2-3 minutes, until everything is heated through and coated in sauce.

Serve hot, garnished with sliced green onions, sesame seeds, and red pepper flakes.
