Protein-Packed Rainbow Veggie Medley Sheet Pan Dinner
ingredients
- 1 red onion, sliced
- 1 bell pepper, sliced
- 1 zucchini, diced
- 1 yellow squash, diced
- 1 cup cherry tomatoes
- 1 cup broccoli florets
- 1 can chickpeas, drained and rinsed
- 1/4 cup balsamic vinegar
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp dried basil
- Salt and pepper to taste

Preheat oven to 400°F.

Spread veggies and chickpeas on a sheet pan.

Drizzle with olive oil and balsamic vinegar.

Sprinkle with garlic, basil, salt, and pepper.
