ingredients
- 1 cup quinoa
- 2 cups low-sodium vegetable broth
- 1 tbsp olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 zucchini, sliced
- 1 cup cherry tomatoes, halved
- 1 cup spinach
- 1/2 cup shredded carrots
- 1/4 cup chopped parsley
- Salt and pepper to taste

Rinse quinoa and cook in vegetable broth according to package instructions.

In a large skillet, heat olive oil and sauté onion and garlic until fragrant.

Add bell pepper, zucchini, and cherry tomatoes; cook until tender.

Stir in spinach, carrots, and cooked quinoa; mix well.
