Zesty Citrus Chicken Medley

- 4 boneless, skinless chicken breasts
- 4 large carrots, peeled and sliced into thin strips
- 4 stalks of celery, sliced diagonally
- 2 tablespoons olive oil
- Juice of 2 lemons
- 2 cloves of garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish
