ingredients
- 4 ounces white chocolate, finely chopped
- 4 tablespoons unsalted butter
- 2 large eggs
- ¼ cup granulated sugar
- ¼ cup all-purpose flour
- 1 cup fresh raspberries
- 1 waffle, fried until crispy
- 4 scoops Oreo ice cream
- Fresh mint leaves, for garnish
steps
- 1.
Preheat the oven to 400°F (200°C). Grease and flour four ramekins.
- 2.
In a microwave-safe bowl, melt the white chocolate and butter together in 20-second intervals, stirring until smooth. Set aside.
- 3.
In a separate bowl, whisk the eggs and sugar until well combined. Slowly pour in the melted white chocolate mixture, whisking continuously.
- 4.
Gently fold in the flour until just incorporated. Be careful not to overmix.
- 5.
Place a spoonful of batter into each prepared ramekin. Add a few raspberries in the center of each ramekin, then cover with the remaining batter.
- 6.
Bake for 10-12 minutes, until the edges are set but the center is still gooey. Remove from the oven and let cool for 1-2 minutes.
- 7.
Carefully invert each ramekin onto a serving plate, allowing the molten center to flow out.
- 8.
Serve each hot lava cake with a crispy fried waffle on the side and a scoop of Oreo ice cream. Garnish with fresh mint leaves.
