ingredients
- 2 cups fresh Peppermint leaves
- 1 cup cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tbsp lemon juice
- Salt and pepper to taste

In a large bowl, combine Peppermint leaves, cucumber, tomatoes, onion, and feta cheese.
