ingredients
- 2 spinalis steaks, approximately 1.5 inches thick
- 2 tablespoons olive oil
- 1 tablespoon kosher salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon fresh rosemary, minced
- 1 tablespoon unsalted butter
- Optional: fresh herbs for garnish
steps
- 1.
Take the spinalis steaks out of the refrigerator and allow them to come to room temperature for about 30 minutes.
- 2.
Preheat your grill or cast iron skillet over medium-high heat until it is very hot.
- 3.
Pat the steaks dry with paper towels, ensuring a nice crust will form when cooking.
- 4.
Rub each steak with olive oil, then generously season both sides with kosher salt, black pepper, garlic powder, and minced rosemary.
- 5.
Place the steaks on the grill/skillet and sear for about 4–5 minutes on each side for medium-rare doneness, adjusting time as needed for desired doneness.
- 6.
In the last minute of cooking, add the butter to the skillet or allow it to melt over the steaks on the grill, basting the steaks for extra flavor.
- 7.
Remove the steaks from heat and let them rest for 5 minutes.
- 8.
Slice against the grain and serve garnished with fresh herbs if desired.
