ingredients
- 6 large bell peppers
- 1 onion, chopped
- 3 cloves of garlic, minced
- 4 cups vegetable broth
- 1 tsp dried thyme
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- Olive oil
steps

Preheat oven to 400°F.

Roast peppers until charred. Peel, deseed, and chop.
- 3.
In a pot, sauté onion and garlic in olive oil.
- 4.
Add peppers, broth, thyme, paprika, salt, and pepper.
- 5.
Simmer for 20 minutes.
- 6.
Blend until smooth.
