- 2 cups sushi rice
- 2 ½ cups water
- ⅓ cup rice vinegar
- 3 tablespoons sugar
- 1 teaspoon salt
- 4 sheets nori (seaweed)
- 1 cucumber, julienned
- 1 avocado, sliced
- 8 ounces imitation crab or cooked shrimp
- 1 small carrot, julienned
- Soy sauce, for dipping
- Wasabi and pickled ginger, for serving

Rinse the sushi rice under cold water until the water runs clear.

Combine rice and water in a rice cooker or saucepan. Cook according to instructions.

In a small bowl, mix rice vinegar, sugar, and salt until dissolved.

Once rice is cooked, gently fold in the vinegar mixture and let it cool.

Place a sheet of nori on a bamboo sushi mat or clean surface, shiny side down.

Spread a thin layer of sushi rice over the nori, leaving an inch at the top edge.

Arrange your fillings (cucumber, avocado, crab or shrimp, carrot) in a line about 1 inch from the bottom.

Moisten the top edge of the nori with water; this will help seal the roll.

Starting from the bottom, carefully roll the sushi away from you, tucking the fillings in tightly.

Slice the roll into 6-8 pieces with a sharp knife. Repeat with remaining ingredients.

Serve with soy sauce, wasabi, and pickled ginger for dipping.
