Saintly Seafood Paella

A traditional Spanish dish perfect for St. Joseph's Day celebrations. This rich and savory paella is filled with a variety of fresh seafood, including shrimp, mussels, and calamari, all simmered in a flavorful saffron-infused broth. The mixture of tender rice, juicy seafood, and aromatic herbs will transport you straight to the Mediterranean coast.
ingredients
- 1 lb shrimp, peeled and deveined
- 1 lb mussels, cleaned and debearded
- 1 lb calamari, sliced into rings
- 2 cups Arborio rice
- 4 cups chicken broth
- 1 onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 cup frozen peas
- 1 tsp smoked paprika
- Pinch of saffron threads
- Salt and pepper to taste
- Fresh parsley for garnish

Heat olive oil in a large paella pan. Add shrimp, mussels, and calamari and cook until slightly browned. Remove and set aside.

In the same pan, sauté onions, garlic, and bell pepper until softened.

Stir in rice, paprika, and saffron. Cook for 2 minutes.

Pour in chicken broth and bring to a boil. Reduce heat and simmer until rice is cooked through.
