Rustic Angus Sirloin Medallions with Mushroom Sauce

Rustic Angus Sirloin Medallions with Mushroom Sauce
ingredients
- 1 lb Angus sirloin steak, trimmed and cut into 1-inch medallions
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- ½ teaspoon black pepper
- 1 cup low-sodium vegetable broth
- 1 cup sliced mushrooms (button or cremini)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
- 1 tablespoon soy sauce (optional, for depth)
- 1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thickening)
- Salt, to taste
steps
- 1.
In a skillet, heat olive oil over medium-high heat. Season the Angus sirloin medallions with garlic powder and black pepper. Sear the medallions for about 3-4 minutes on each side, or until they reach your desired doneness. Remove and let rest.
- 2.
In the same skillet, add the chopped onion and sliced mushrooms. Sauté until soft and lightly browned, about 4-5 minutes.
- 3.
Stir in minced garlic and thyme, cooking for another minute until fragrant.
- 4.
Pour in the vegetable broth and soy sauce, bringing the mixture to a gentle simmer.
- 5.
If a thicker sauce is desired, mix the cornstarch with water and add it to the skillet, stirring until thickened. Adjust seasoning with salt as needed.
- 6.
To serve, plate the sliced sirloin medallions and spoon the mushroom sauce generously over the top.
