Tender beef slow-cooked in a rich beer and vegetable broth, infused with savory seasonings, and hearty root vegetables. A comforting and satisfying meal perfect for chilly nights.
ingredients
- 2 lbs stewing beef, cubed
- 2 tbsp olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 2 potatoes, diced
- 2 cups beef broth
- 2 cups dark beer
- 1 tbsp Worcestershire sauce
- 1 tsp thyme
- Salt and pepper to taste

In a large pot, dutch oven, or potjie heat olive oil and brown beef cubes.

Add onion and garlic, cook until onions are translucent.

Stir in carrots, celery, and potatoes.

Pour in beef broth, beer, Worcestershire sauce, and seasonings.

Simmer on low for 2-3 hours until beef is tender.
