Cheesy Butternut Squash Sliders with Caramelized Onions

- 1 small butternut squash
- 4 small slider rolls
- 1 yellow onion, thinly sliced
- 2 tablespoons olive oil
- 2 teaspoons balsamic vinegar
- 4 slices of your favorite cheese (such as cheddar or Swiss)
- ½ teaspoon dried thyme
- Salt and pepper, to taste
- 1 tablespoon maple syrup
- 1 teaspoon Dijon mustard
- 4 fresh basil leaves
- 4 tomato slices

Preheat the oven to 375°F (190°C).

Slice the butternut squash into ½-inch thick slices.

Place the squash slices on a baking sheet lined with parchment paper. Drizzle with 1 tablespoon of olive oil, sprinkle with dried thyme, salt, and pepper.

Roast in the oven for 20-25 minutes until the slices are tender.

Meanwhile, heat 1 tablespoon of olive oil in a skillet over medium-low heat.

Add the sliced onions and cook until caramelized, about 15 minutes. Stir in balsamic vinegar and cook for an additional 2 minutes.

In a small bowl, mix together maple syrup and Dijon mustard.

Slice the slider rolls in half and toast them.

Assemble the sliders by placing a roasted squash slice on the bottom half of each roll.

Top with a slice of cheese, spoonfuls of caramelized onions, a drizzle of the maple syrup and mustard mixture, a fresh basil leaf, and a tomato slice.
