Hearty Chickpea Vegetable Soup
ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp turmeric
- 1/4 tsp cayenne pepper
- 4 cups vegetable broth
- 2 cans chickpeas, drained and rinsed
- 1 bunch kale, stems removed and leaves chopped
- 2 carrots, diced
- 2 potatoes, diced
- Salt and pepper to taste

Heat olive oil in a large pot over medium heat.

Add onion, garlic, carrots, and potatoes, sauté until softened.

Stir in cumin, paprika, turmeric, and cayenne pepper, cook for 1 minute.

Pour in vegetable broth, chickpeas, kale.
- 5.
Bring to a boil, then reduce heat and simmer for 20 minutes.

Season with salt and pepper before serving.
