ingredients
- 1 cup jasmine rice
- 2 large eggs
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 green onions, chopped
- 1 teaspoon sesame seeds
- Salt and pepper, to taste
- Fresh cilantro or parsley, for garnish (optional)
- Water, as needed
steps
- 1.
Rinse the jasmine rice under cold water until the water runs clear.
- 2.
In a pot, combine the rinsed rice and 1.5 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes until rice is fluffy and water is absorbed.
- 3.
While the rice cooks, crack the eggs into a bowl and whisk until well combined.
- 4.
In a non-stick skillet, heat the sesame oil over medium heat. Pour in the whisked eggs, and season with salt and pepper.
- 5.
Stir gently until the eggs are softly scrambled, then remove from heat.
- 6.
Once the rice is done, fluff it with a fork and divide it between two bowls.
- 7.
Top each bowl of rice with the scrambled eggs, a drizzle of soy sauce, and chopped green onions.
- 8.
Garnish with sesame seeds and fresh herbs if desired. Serve immediately!
