- 4 tablespoons unsalted butter
- Salt and black pepper, to taste
- 1 tablespoon olive oil
- Lemon wedges, for serving

In a large pot, bring salted water to a boil and add the new potatoes. Cook until tender, about 15-20 minutes, then drain.

Meanwhile, heat olive oil in a large skillet over medium-high heat. Season the monkfish with salt and pepper, then add to the skillet. Sear for 4-5 minutes on each side until golden brown and cooked through. Remove and keep warm.
- 3.
In the same skillet, add butter and minced garlic, stirring for about 1 minute until fragrant.
- 4.
Toss in the rinsed samphire and cook for 2-3 minutes until just tender.
- 5.
Add the drained new potatoes to the skillet, mixing gently to coat them in the garlic butter.
- 6.
Serve the monkfish alongside the garlic new potatoes and samphire, garnished with lemon wedges.
