ingredients
- 4 bone-in chicken pieces (legs or thighs)
- 1 can (10.5 oz) condensed cream of mushroom soup
- 1 cup chicken broth
- 1 large onion, thinly sliced
- 8 oz cremini mushrooms, sliced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- Salt and pepper to taste
steps
- 1.
Preheat the oven to 375°F (190°C).
- 2.
Heat olive oil in a large oven-safe skillet over medium-high heat. Season the chicken pieces with salt and pepper, then sear them for 4-5 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.
- 3.
In the same skillet, add the onions, garlic, and mushrooms. Sauté until the onions are translucent and mushrooms have released their moisture, about 5 minutes.
- 4.
Stir in the dried thyme and cook for an additional 1-2 minutes.
- 5.
Add the condensed mushroom soup and chicken broth to the skillet. Stir well to combine all the ingredients.
- 6.
Place the seared chicken pieces back into the skillet, nestling them into the sauce. Spoon some of the sauce over the chicken.
- 7.
Cover the skillet with foil or a lid and transfer it to the preheated oven. Bake for 30-35 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
- 8.
Serve the savory mushroom chicken over rice or mashed potatoes, spooning the delicious sauce over the top.
