ingredients
- 2 pounds potatoes
- 2 cups all-purpose flour
- 1 egg, lightly beaten
- 1 teaspoon salt
- 6 tablespoons butter
- 10-12 fresh sage leaves
- Salt and pepper to taste
- Grated Parmesan cheese for garnish
steps
- 1.
Boil the potatoes until tender, then peel and mash them. Allow them to cool.
- 2.
In a large mixing bowl, combine the cooled mashed potatoes, flour, egg, and salt. Mix until a dough forms.
- 3.
Divide the dough into four equal portions and roll each portion into a long rope about 1/2 inch thick.
- 4.
Cut the ropes into 1-inch pieces and use a fork to create ridges on each gnocchi.
- 5.
In a large pot, bring salted water to a boil. Cook the gnocchi in batches until they float to the surface. Remove using a slotted spoon and set aside.
- 6.
In a skillet, melt the butter over medium heat. Add the sage leaves and cook until they become crispy and the butter turns golden brown. Season with salt and pepper.
- 7.
Add the cooked gnocchi to the skillet and toss gently to coat them evenly with the butter sage sauce.
- 8.
Serve hot, garnished with grated Parmesan cheese.
