Hearty Stuffed Peppers with Pork

- 2 large bell peppers (any color)
- ⅔ lb ground pork
- ⅔ cup cooked rice
- ½ small onion, diced
- 1 clove garlic, minced
- ⅔ cup diced tomatoes (canned or fresh)
- ⅔ tsp paprika
- ⅔ tsp cumin
- ⅓ tsp salt
- ⅓ tsp black pepper
- ⅓ cup shredded cheese (cheddar or mozzarella)
- 1 tbsp olive oil
- Fresh parsley, for garnish

Preheat the oven to 375°F (190°C). Slice the tops off the bell peppers and remove the seeds.

In a skillet, heat olive oil over medium heat. Add the diced onion and garlic, sauté until the onion is translucent.

Add the ground pork to the skillet, cooking until browned, breaking it up with a spatula.

Stir in cooked rice, diced tomatoes, paprika, cumin, salt, and pepper. Mix well and let simmer for 5 minutes.

Fill each pepper with the ground pork mixture, packing it tightly.

Place the stuffed peppers upright in a baking dish.

Sprinkle cheese on top of each filled pepper.

Cover the dish with foil and bake for 25 minutes.

Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.

Let cool for a few minutes, garnish with fresh parsley, and serve warm.
