Cheesy Tomato-Chicken Broccoli Rice

- 1 cup long-grain white rice
- 1 pound ground chicken
- 1 cup broccoli florets
- ½ cup sundried tomatoes, rehydrated and chopped
- 2 cloves garlic, minced
- 1 small onion, diced
- 2 tablespoons olive oil
- 2 tablespoons soy sauce
- 1 teaspoon dried oregano
- ½ teaspoon paprika
- Salt and pepper to taste
- 1 cup shredded mozzarella cheese
- Fresh parsley, chopped (for garnish)

Cook rice according to package instructions.

In a large skillet, heat olive oil over medium heat.

Add garlic and onion, sauté until fragrant and onion becomes translucent.

Sprinkle shredded mozzarella cheese over the mixture.
