Roasted Turkey and Vegetable Medley

- 1 pound ground turkey
- 1 medium sweet potato, diced
- 1 head cauliflower, chopped into florets
- 1 can (15 oz) garbanzo beans, drained and rinsed
- 3 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)

Preheat your oven to 425°F (220°C).

In a large bowl, toss sweet potato and cauliflower florets with 2 tablespoons of olive oil, salt, and pepper. Spread them on a baking sheet and roast in the oven for about 25-30 minutes, or until tender and caramelized.

While the vegetables roast, heat the remaining olive oil in a skillet over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.

Stir in minced garlic and cook for another minute until fragrant.

Add the ground turkey, seasoning with salt, pepper, smoked paprika, and cumin. Cook until browned and fully cooked, about 6-8 minutes.

When the vegetables are done, add them to the skillet along with the garbanzo beans. Stir to combine and heat through for about 3-4 minutes.

Taste and adjust seasoning as necessary. Garnish with fresh parsley before serving.
