Scallops with Crispy Bacon

- 4 center-cut bacon slices
- 3 large navel oranges, divided
- 1½ pounds sea scallops
- ½ tsp. black pepper
- 1 tsp. kosher salt, divided
- 1 Tbsp. apple cider vinegar
- 2 tsp. chopped fresh thyme

In a large skillet over medium heat, cook the bacon slices until crispy, about 4-5 minutes. Remove and place on paper towels to drain, then crumble.

While the bacon cooks, zest and juice two of the oranges. Reserve the third orange for segmenting.

Dry the scallops with paper towels and season with black pepper and half of the kosher salt.

In the same skillet with bacon drippings, increase heat to high and carefully add the scallops. Sear for about 2-3 minutes on each side until golden brown and cooked through.

Create the orange dressing by combining the orange juice, apple cider vinegar, remaining salt, and chopped thyme in a bowl. Stir well.

Segment the remaining orange, removing the pith and membrane.

To serve, plate the seared scallops and drizzle with the orange dressing. Top with the crumbled bacon and orange segments for a fresh burst of flavor.
