Bacon-Wrapped Scallop & Mango Rice
ingredients
- 1 lb large sea scallops
- 8 slices bacon
- 1 cup jasmine rice
- 1 can coconut milk
- 1 cup chicken broth
- 2 cloves garlic, minced
- 1 tbsp olive oil
- Salt and pepper to taste
- 1 ripe mango, diced
