ingredients
- 1 lb shrimp, peeled and deveined
- 1 lb salmon fillet, skin removed and cut into chunks
- 1 lb cod fillet, cut into chunks
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 onion, diced
- 1 bell pepper, diced
- 1 zucchini, sliced
- 1 cup cherry tomatoes, halved
- 1/2 cup low-sodium chicken broth
- 1 tbsp lemon juice
- Salt and pepper to taste
- Fresh parsley for garnish

In a large pan, heat olive oil over medium heat. Add garlic and onion, sauté until fragrant.

Add bell pepper, zucchini, and cherry tomatoes. Cook until vegetables are tender.

Push vegetables to the side, add shrimp, salmon, and cod to the pan. Cook until seafood is no longer translucent.

Pour in chicken broth and lemon juice. Season with salt and pepper.

Simmer for 5 minutes until seafood is cooked through.
