Herb-Infused Mediterranean Chicken Skewers

- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 1/4 cup olive oil
- 3 tbsp fresh lemon juice
- 3 cloves garlic, minced
- 1 tbsp dried oregano
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
- 1 tsp dried tarragon
- 1 tsp paprika
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1 red bell pepper, cut into 1-inch pieces
- 1 zucchini, sliced into half-moons
- 1 red onion, cut into wedges
- Fresh parsley, for garnish

In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, rosemary, thyme, tarragon, paprika, black pepper, and salt.

Add the chicken cubes to the marinade, ensuring they are evenly coated. Cover and refrigerate for at least 1 hour, preferably overnight for more intense flavor.

Soak wooden skewers in water for 30 minutes to prevent burning.

Preheat the grill to medium-high heat.

Thread the marinated chicken, red bell pepper, zucchini, and red onion onto the skewers, alternating the ingredients.

Grill the skewers for about 10-15 minutes, turning occasionally, until the chicken is fully cooked and has nice grill marks.

Remove from the grill and let rest for a few minutes.

Garnish with fresh parsley and serve warm with a side of tzatziki or pita bread.
