ingredients
- 1.5 lbs pork loin
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp fresh rosemary, chopped
- 1 lb Yukon Gold potatoes, peeled and cubed
- 4 cloves garlic, minced
- 1/2 cup heavy cream
- 1 tbsp Dijon mustard
- 8 oz green beans, trimmed
- 2 tbsp butter
- Zest of 1 lemon
steps
- 1.
Preheat your hot plate or skillet over medium-high heat.
- 2.
Season the pork loin with salt, pepper, and chopped rosemary. Drizzle with olive oil and sear on all sides until golden brown (about 4-5 minutes per side).
- 3.
Transfer the pork loin to a plate and let it rest while you prepare the potatoes.
- 4.
In a pot, bring water to a boil, add the cubed Yukon Gold potatoes, and cook for 15-20 minutes, until tender.
- 5.
Drain the potatoes and return them to the pot. Stir in minced garlic, heavy cream, and season with salt and pepper to taste. Mash until creamy.
- 6.
In a separate skillet, melt butter over medium heat and add green beans. Sauté for about 5-7 minutes until tender and bright green, adding lemon zest at the end.
- 7.
For the sauce, return the hot plate to the heat and add Dijon mustard to the leftover drippings, stirring to combine. Add a splash of water if needed, and simmer for a couple of minutes.
- 8.
Slice the pork loin and serve it atop the creamy garlic mashed potatoes, with sautéed green beans on the side. Drizzle with the mustard cream sauce.
