- 1 teaspoon baking soda

- 1 ½ cups buttermilk
- 1 tablespoon hot pepper sauce (e.g. Tabasco™)
- 1 large egg
- 2 cloves garlic, minced
- 3 cups vegetable shortening for frying
- 4 cups milk

In a shallow dish, combine 2 cups flour, baking powder, baking soda, black pepper, and salt.

In another dish, whisk together buttermilk, hot pepper sauce, egg, and garlic.

Dredge each cube steak in flour, dip in buttermilk mixture, then back in flour.

Heat shortening in a skillet over medium-high heat.

Fry cube steaks for 3-4 minutes per side until golden brown.

Remove steaks and drain on paper towels.

Make gravy by whisking ¼ cup flour into the skillet, then slowly whisking in milk.
