Tender chicken, colorful veggies, and zesty spices in a rich tomato sauce over farfalle pasta.
ingredients
- 1 lb farfalle pasta
- 2 tbsp olive oil
- 2 chicken breasts, diced
- 1 tsp chili powder
- 1 tsp cumin
- 3 cloves fresh garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 jar fire roasted tomato pasta sauce
- 8 mini sweet peppers, sliced
- 6 plum tomatoes, diced
- 1 white onion, diced
- 2 tbsp butter

Cook pasta according to package instructions, drain, and set aside.

In a large skillet, heat olive oil and cook chicken until browned.

Add chili powder, cumin, garlic, oregano, and basil. Stir to combine.

Mix in tomato sauce, mini sweet peppers, tomatoes, and onion. Simmer for 10 minutes.

Stir in butter until melted.
