Fresh asparagus, avocado, tomato, and corn with a bold chipotle vinaigrette.
ingredients
- 1 lb asparagus, trimmed
- 1 avocado, diced
- 1 cup cherry tomatoes, halved
- 1 cup corn kernels
- ¼ cup olive oil
- 2 tbsp apple cider vinegar
- 1 tbsp honey
- 1 chipotle pepper in adobo sauce, minced
- 1 garlic clove, minced
- Salt and pepper to taste

Preheat grill to medium-high heat.

Brush asparagus with olive oil and grill for 5-7 minutes, until tender.

In a small bowl, whisk together olive oil, vinegar, honey, chipotle pepper, garlic, salt, and pepper to make the vinaigrette.
