ingredients
- 12 oz spaghetti
- 2 cups cherry tomatoes, halved
- 1/4 cup extra virgin olive oil
- 4 cloves garlic, minced
- 1/2 tsp red pepper flakes (optional)
- 1 cup fresh basil leaves, torn
- Salt and pepper, to taste
- 1/2 cup grated Parmesan cheese, plus more for serving
steps
- 1.
Cook the spaghetti according to package instructions in salted boiling water until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.
- 2.
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, cooking until fragrant (about 1 minute).
- 3.
Add the cherry tomatoes to the skillet and season with salt and pepper. Sauté for about 5-7 minutes until the tomatoes are soft and begin to burst.
- 4.
Stir in the torn basil leaves and the reserved pasta water, allowing it to simmer for a couple of minutes.
- 5.
Toss the cooked spaghetti into the skillet, mixing well to coat the pasta with the tomato-basil sauce.
- 6.
Remove from heat and add the grated Parmesan cheese, tossing until evenly distributed. Adjust seasoning if necessary.
- 7.
Serve immediately, garnished with additional Parmesan cheese and a few fresh basil leaves on top.
