ingredients
- 3 lbs honey
- 4 cups white grape juice (100% juice, no additives)
- 1 tsp acid blend
- 1/2 tsp yeast nutrient
- 1 pkg champagne yeast
- 1/2 cup water (boiled and cooled)
- 1/4 cup priming sugar (for carbonation)
steps
- 1.
In a sanitized fermentation vessel, mix the honey with 1/2 cup boiled water until fully dissolved.
- 2.
Add the white grape juice, acid blend, and yeast nutrient, stirring gently to combine.
- 3.
Sprinkle the champagne yeast on top of the mixture; do not stir.
- 4.
Seal the fermentation vessel with an airlock and place it in a dark, cool area (around 65-75°F) for fermentation, about 2-4 weeks.
- 5.
Once fermentation is complete (specific gravity stabilizes), taste and adjust sweetness if desired.
- 6.
Dissolve priming sugar in 1/4 cup water and add to the pyment, stirring gently to mix.
- 7.
Bottle the pyment in clean, sanitized bottles, leaving about an inch of headspace. Cap securely.
- 8.
Allow the bottles to carbonate at room temperature for 1-2 weeks; then chill in the refrigerator before serving.
- 9.
Open carefully and pour into glasses, enjoying the effervescent fizz of your sparkling creation!
