Tender flounder coated in Cajun spices paired with a zesty Brussels sprouts salad dressed in a tangy vinaigrette. A light and flavorful dish bursting with vibrant colors and bold flavors.
ingredients
- 4 flounder fillets
- 2 tbsp Cajun seasoning
- 1 lb Brussels sprouts, thinly sliced
- 1/4 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- Salt and pepper, to taste
