Fiery Corn and Kidney Bean Soup
ingredients
- 1 tablespoon olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- ½ teaspoon paprika
- ¼ teaspoon cayenne pepper (adjust to taste)
- 2 cans (15 ounces each) kidney beans, rinsed and drained
- 1 can (15 ounces) sweet corn, drained
- 4 cups vegetable broth
- Juice of 1 lime
- Salt and pepper, to taste
- Fresh cilantro, for garnish
- Lime wedges, for serving

Heat olive oil in a large pot over medium heat. Add diced onion and sauté until translucent, about 5 minutes.

Stir in minced garlic, cumin, chili powder, paprika, and cayenne pepper. Cook for another minute, until fragrant.

Add kidney beans, sweet corn, and vegetable broth to the pot. Bring to a boil, then reduce heat and let the soup simmer for 15-20 minutes, allowing the flavors to meld together.

Using an immersion blender or a regular blender, partially blend the soup to create a creamy texture while still leaving some whole beans intact.

Stir in the lime juice, and season with salt and pepper.
