- 1 (12-oz.) loaf French bread, halved lengthwise
- 1/2 cup mayonnaise
- 2 tbsps. butter
- 3/4 cup finely chopped sweet onion
- 3 cloves garlic, minced
- 1 pound cooked crawfish tails
- 3/4 cup chopped green onion
- 1 tbsp. chopped fresh parsley
- 1 tsp. Cajun seasoning
- 1 (8-oz.) package cream cheese, softened
- 1/2 cup grated Parmesan cheese
- 3/4 cup shredded Monterey Jack cheese with peppers
- 1/2 tsp. sweet paprika
- Parsley for garnish

Place bread halves, cut side up, on a baking sheet.

Divide mayonnaise between bread halves, spreading evenly.
