Coconut Rice Bowl Revamped
ingredients
- 2 cups coconut milk
- 1 cup basmati rice
- 1 small cucumber, diced
- 1 bell pepper, sliced
- 1 carrot, shredded
- 1/2 cup cilantro, chopped
- 1/4 cup lemon juice
- 2 tbsp honey
- 1 tsp chili powder
- 1/2 tsp turmeric
- Salt and pepper to taste

In a pot, bring coconut milk to a boil. Add rice, cover, simmer for 15-20 minutes.

In a bowl, combine cucumber, bell pepper, carrot, and cilantro.

Mix lemon juice, honey, chili powder, turmeric, salt, and pepper for the zesty sauce.

Fluff cooked rice, divide into bowls. Top with vegetable mix and drizzle with zesty sauce.
