Spicy Shrimp Melt

A fiery twist on the classic egg sandwich! Crispy shrimp marinated in Cholula hot sauce, combined with creamy cottage cheese, tangy mayo, and fried in butter and soy sauce. This indulgent sandwich is a perfect balance of flavors that will leave you craving for more.
ingredients
- 10 medium shrimp, peeled and deveined
- 1 tablespoon Cholula hot sauce
- 1/2 cup cottage cheese
- 2 tablespoons mayonnaise
- 4 slices of bread
- 2 tablespoons butter
- 1 tablespoon light soy sauce
- Salt and pepper, to taste
- Optional toppings: lettuce, tomato

In a bowl, marinate the shrimp in Cholula hot sauce, and set aside for 10 minutes.

In another bowl, mix the cottage cheese, mayonnaise, salt, and pepper until well combined.

Heat a skillet over medium heat and melt the butter.

Add the marinated shrimp to the skillet, along with any remaining hot sauce. Sauté until shrimp is cooked through, around 3-4 minutes.

Using a slotted spoon, transfer the shrimp to a plate and set aside.

In the same skillet, add the soy sauce and swirl to mix with the butter.

Place two slices of bread in the skillet, and toast one side until golden and crispy.

Flip the bread slices and spread the cottage cheese mixture onto the non-toasted side of each slice.

Divide the cooked shrimp evenly between the two bread slices and top with optional lettuce and tomato.

Place the remaining two bread slices, toasted-side down, on top of the shrimp.

Gently press the sandwich together and cook until the bottom is golden and crispy.

Flip the sandwich and cook the other side until golden and crispy.

Remove from the skillet, slice in half, and serve hot.
