Spicy Spinach Kadhi Pakoda

- 1 cup gram flour (besan)
- 1 cup yogurt
- 1 bunch fresh spinach, finely chopped
- 1 onion, finely chopped
- 2 green chilies, finely chopped
- 1 teaspoon ginger-garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- Salt to taste
- Oil for frying
- Fresh coriander leaves for garnish

In a mixing bowl, combine gram flour, yogurt, chopped spinach, onion, green chilies, ginger-garlic paste, cumin seeds, turmeric powder, red chili powder, garam masala, and salt. Mix well to form a thick batter.

Heat oil in a deep pan for frying. Drop small portions of the batter into the hot oil and fry until golden brown and crispy. Remove the pakodas and drain excess oil on a paper towel.

Meanwhile, in a separate pan, add a tablespoon of oil and heat it. Add cumin seeds and let them splutter. Then, mix in the yogurt-besan mixture and cook on low heat for 15-20 minutes, stirring occasionally until the kadhi thickens.

Add the fried pakodas into the kadhi and cook for another 5 minutes to allow the flavors to blend together.

Garnish with fresh coriander leaves and serve the spicy spinach kadhi pakoda hot with steamed rice or roti.
