Spicy Arugula Squash and Mushroom Fish Explosion
ingredients
- 4 oz white fish fillet (e.g., cod, tilapia)
- 1 cup yellow squash, cut into cubes
- ½ cup mushrooms, sliced
- 1 cup fresh arugula
- ½ teaspoon paprika
- ¼ teaspoon cayenne pepper
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ teaspoon salt
- 1 tablespoon olive oil
- Fresh cilantro for garnish
steps
- 1.
Preheat your oven to 375°F (190°C).
- 2.
In a small bowl, combine paprika, cayenne pepper, garlic powder, onion powder, and salt.
- 3.
Place the fish fillet on a lined baking sheet and sprinkle the spice mixture evenly on top.
- 4.
In a separate bowl, toss the yellow squash cubes and fresh arugula with olive oil until coated. Spread them on the baking sheet around the fish.
- 5.
Bake for 15-20 minutes or until the fish is cooked through and flakes easily with a fork.
- 6.
While the fish and squash are baking, heat a non-stick skillet over medium heat. Add sliced mushrooms and cook until they become tender and release their moisture.
- 7.
Serve the cooked fish on a plate with the roasted squash cubes, sautéed mushrooms, and fresh arugula.
- 8.
Garnish with fresh cilantro and add additional spices if desired.
