ingredients
- 1 lb skirt steak, thinly sliced
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp chili powder
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp vegetable oil
- 8 small corn tortillas
- 1/2 cup chopped onions
- 1/4 cup chopped fresh cilantro
- 1/4 cup salsa verde
- 1/4 cup sour cream
- 1 lime, cut into wedges
steps
- 1.
In a bowl, combine the cumin, paprika, chili powder, garlic powder, salt, and black pepper. Rub the spice mixture evenly over the sliced skirt steak and let it marinate for 30 minutes.
- 2.
Preheat a grill or grill pan over medium-high heat. Drizzle the vegetable oil over the steak slices. Grill the steak for about 2-3 minutes per side, or until it reaches your desired level of doneness. Remove from heat and let it rest for a few minutes. Slice the steak into thinner strips.
- 3.
Warm the corn tortillas on the grill for about 30 seconds per side, until pliable and lightly charred.
- 4.
To assemble the tacos, place a few slices of grilled steak on each tortilla. Top with chopped onions, fresh cilantro, a drizzle of salsa verde, and a dollop of sour cream. Squeeze a lime wedge over each taco.
- 5.
