- 8 beef or pork hot dog sausages
- 8 hot dog buns
- 1 tablespoon vegetable oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 jalapeño pepper, finely chopped
- 1 pound ground beef
- 2 tablespoons chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 can (14 oz) diced tomatoes
- 1 can (8 oz) tomato sauce
- 2 tablespoons tomato paste
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 cup beef broth
- 1 cup shredded cheddar cheese
- Optional toppings: chopped jalapeños, diced onions, sour cream

Heat the vegetable oil in a large pot over medium heat. Add the diced onion, minced garlic, and jalapeño pepper. Sauté for 3-4 minutes until softened.
