ingredients
- 1 cup glutinous rice flour
- 1 cup water
- 1/2 cup sugar
- 1/2 cup sweetened red bean paste
- 12 fresh strawberries
- Cornstarch, for dusting
- Additional water, for sealing
steps
- 1.
In a microwave-safe bowl, combine the glutinous rice flour and water. Mix well until smooth. Add sugar and stir until dissolved.
- 2.
Cover the bowl with plastic wrap and microwave on high for 2 minutes. Remove from the microwave and stir. Re-cover the bowl and microwave for another 1 minute.
- 3.
Sprinkle cornstarch on a clean surface and transfer the hot mochi dough. Allow it to cool slightly until it's comfortable to touch.
- 4.
Divide the dough into 12 equal portions. Flatten each portion with your hands, dusting with cornstarch as needed to prevent sticking.
- 5.
Place a small dollop of red bean paste in the center of each flattened piece of mochi.
- 6.
Take a fresh strawberry and gently press it into the red bean paste, wrapping the mochi around it. Pinch the edges together to seal, ensuring the strawberry is completely enclosed.
- 7.
Repeat the process for the remaining strawberries and mochi portions.
- 8.
Serve the strawberry blossom mochi immediately or store in an airtight container in the refrigerator for up to 2 days.
