Succulent Sous Vide Beef Tips with Mushroom Gravy and Roasted Asparagus

- 1.5 lb beef sirloin tips, trimmed and cut into bite-sized pieces
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 16 oz mushrooms, sliced
- 2 cups low-sodium beef broth
- 2 tbsp cornstarch
- 2 tbsp water
- Salt and pepper, to taste
- 2 lbs russet potatoes, peeled and cubed
- 4 tbsp reduced-fat milk
- 1 bunch asparagus
- 4 tsp olive oil
- Salt and pepper, to taste

Season beef tips with salt and pepper, then place them in a Suvie-ready bag. Add minced garlic, mushrooms, beef broth, cornstarch, and water. Seal and load into Suvie protein pan. Fill Suvie water reservoir, input settings, and cook.

Preheat oven in Suvie to 400°F. In a separate pan, toss asparagus with olive oil, salt, and pepper. Load asparagus into designated zone and cook.

Boil potatoes until fork-tender. Drain, mash with milk, salt, and pepper, then let cool. Transfer to freezer-safe container for Suvie.

When beef is done, remove bags from Suvie. Pour liquid into saucepan and simmer to thicken. Serve beef and mushrooms over defrosted mashed potatoes with gravy. Serve roasted asparagus on the side.
