ingredients
- 2 pounds dried navy beans
- 1 pound bacon, diced
- 2 onions, finely chopped
- 1 green bell pepper, finely chopped
- 1 cup ketchup
- 1/2 cup molasses
- 1/4 cup brown sugar
- 1/4 cup apple cider vinegar
- 2 tablespoons Dijon mustard
- 1 tablespoon Worcestershire sauce
- 1 teaspoon liquid smoke
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
steps
- 1.
Rinse the dried navy beans and soak them overnight in a large pot of water. Drain and rinse the beans.
- 2.
In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon with a slotted spoon, leaving the bacon grease in the skillet.
- 3.
In the same skillet, add the onions and bell pepper. Sauté until softened, about 5 minutes.
- 4.
In a separate bowl, combine ketchup, molasses, brown sugar, apple cider vinegar, Dijon mustard, Worcestershire sauce, liquid smoke, garlic powder, smoked paprika, salt, and pepper.
- 5.
In a slow cooker, combine the soaked beans, cooked bacon, sautéed onions and bell pepper, and the BBQ sauce mixture. Stir well to coat everything.
- 6.
Cover and cook on low heat for 8 hours or until the beans are tender and the flavors are well blended.
- 7.
Adjust the seasoning if needed and serve hot.
