Sweet Potato Honey Chocolate Truffles

- 1 cup cooked and mashed sweet potato
- 1/2 cup dark chocolate chips (70% cocoa or higher)
- 1/4 cup almond flour
- 2 tablespoons raw honey
- 1 teaspoon vanilla extract
- 1/4 teaspoon cinnamon
- 1/4 cup unsweetened cocoa powder (for rolling)

In a microwave-safe bowl, melt the dark chocolate chips in 30-second intervals, stirring until smooth.
