ingredients
- 2 tbsp vegetable oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp turmeric
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 2 tbsp tomato paste
- 1 tbsp tamarind paste
- 1 can coconut milk
- 2 tbsp brown sugar
- 1 lb tiger tomatoes, halved
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)

Heat the oil in a large saucepan. Add the onion and garlic and cook for 3 minutes.

Add the spices and cook for 1 minute until fragrant.

Mix in the tomato and tamarind paste and stir until combined.

Pour in the coconut milk and brown sugar and bring to a simmer.

Add the tiger tomatoes and cook for 10-12 minutes until the tomatoes are soft and the sauce has thickened.

Season with salt and pepper.

Serve the curry with fluffy basmati rice and garnish with chopped cilantro.
