Beefy Taco Fusion Pasta Salad

- 12 oz rotini pasta
- 1 lb ground beef
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup corn, frozen or canned
- 1 cup cherry tomatoes, halved
- 1 red bell pepper, diced
- 1 small red onion, finely chopped
- 1 cup shredded cheddar cheese
- 1 avocado, diced
- ½ cup cilantro, chopped
- ½ cup sour cream
- ½ cup mayonnaise
- 2 tbsp taco seasoning
- 1 tbsp lime juice
- Salt and pepper to taste

Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool.

In a skillet over medium heat, cook the ground beef until browned; drain excess fat. Stir in 1 tablespoon of taco seasoning and cook for another minute. Let cool slightly.

In a large bowl, combine the black beans, corn, cherry tomatoes, red bell pepper, red onion, cooked pasta, and the seasoned ground beef.

In a separate bowl, mix together sour cream, mayonnaise, remaining taco seasoning, lime juice, salt, and pepper to create the dressing.
